Hello Good People!

*whew* it's a busy time around here! Matt's made a hemp line of nut milk bags to go along with the nylon ones and we're having fun coming up with a bunch of things to make with this sustainable material! Groovy baby! Here is the scoop on the hemp

Wanted to let you know we are getting closer and closer to getting doors officially open! Please check out the stair risers I finally got around to drawing - little by little things get done and we are creating a space we really love.


upcoming raw food haps

OK, let's get right to the haps for JUNE! OMG we're in June already!

  • Thursday, June 5th is a possible field trip to Rhode Island. More details can be found here - I have lots going on but I'd like to go... there's always hope! :-)

  • Thursday, June 12th is a scheduled potluck for Worcester VT! Yippeee!! Please let me know if you can join us. More details can be found here

  • Sunday, June 15th is a potluck in Keene, NH. One of our meetup members has offered this which I am happy to post and share. It's at noon on a Sunday so please consider joining in for some fun! The details are here

  • Friday, June 20th is a day in the life of class here in Worcester. Here are the details:

    You'll learn fabulous recipes for breakfast, lunch, dinner and dessert. Cost of this class is $45 - ridiculously priced! Come hungry because we'll be eatin'!     • Tuesday, June 24 Chocolate O Dream Pie - 1 hour Raw Food Workshop at Hunger Mountain Coop beginning at 6 pm. This is the pie that I sampled out at the kale workshop last month. DREAMY tasting and very easy to make. Please call Krystal to sign up at 223-8004 x 202 or sign up at the coop.


now for the raw recipe this week

I'm dreaming of zucchini coming from my garden. But first I have to plant them! Here's something that is very easy and yummy for zucchini time:

Zucchini Ratatouille

Serves 2

Ingredients:

  • 2 large zuchini, cut into rounds or just chopped
  • 1/4 cup olive oil
  • 2 tablespoons raw apple cider vinegar
  • 1 1/2 cups sundried tomatoes, soaked
  • 2 tablespoons fresh thyme, minced
  • 1 tablespoon fresh rosemarry, minced
  • celtic sea salt and pepper to taste

Preparation:

Cut zucchini into rounds or just roughly chop and put into a bowl then stir in some olive oil, salt and dash of pepper. Place zucchini on Teflex dehydrator sheets and dehydrate for 1 hour at 145 degrees F. Soak sundried tomatoes with equal part water. At the end of an hour, blend the remaining ingredients in blender until smooth. Pour sauce over zucchini and stir together before serving. Serve with a salad.
