Well today was a super fun day doing a workshop for some members of the Vermont Dietetic Assoc. They were having their annual meeting and asked me to demonstrate a raw recipe. We sampled out a variety of flavors including:
- the chick-UN salad on top of my ginger crackers (because I think the 2 flavors are so rockin' together)
- the NOT tuna with this sprouted grain flat bread that I made
- the RAWsome chilli with "sour cream"
- the date nut torte (which one person today asked for the recipe for so she can teach her kids at school - I gladly obliged. I'm SO happy to get this to the kiddos.)
and then we made and sampled 2 recipes: hazelnut milk and then a chocolate dream pie made with irish moss and hazelnut milk.
Some people were actually giggling after they tried the dream pie - they thought it tasted incredible. This, by the way, pleases me to no end!
My kids are now thrilled to eat the remaining leftovers of the dream pie and they just had some date nut torte (one of their favorites.) I'm very grateful to live here in VT where there are so many open and receptive DIETICIANS! How awesome is that? I told them that if they wanted to do any case studies for raw food, to let me be their guinea pig! Wouldn't that be fun?
An interesting thing that was asked: if I ever "cheat" on my diet. My answer was "there is no guilt or shame!" - I don't cheat because I'm not on a diet. If I want to eat whatever, I eat it. OK SO HERE ARE THE HAPS THAT ARE COMING UP:
- Saturday, May 17th is a buy local community day here at the Doty Memorial School in Worcester. There will be local vendors showing/selling their crafts from 10 am until 1 pm. I'll have a table set up with information and the raffle item that I am donating is a SPIRAL SLICER & NUT MILK BAG with a lesson on how to use them! SO check it out and support your local businesses. This event is to help pay for the Worcester 4th of July Fireworks which are awesome.
- May 20th, Tuesday is the Beautiful Kale Salad Workshop at Hunger Mountain Coop. This goes from 6 pm to 7 pm. The coop, as you are probably aware, is doing construction so we haven't scheduled any further workshops there until we get the OK from them. This workshop on Tuesday is an alternative to sauteeing kale which is delightful to not use the stove particularly when we have an abundance of fresh kale from our gardens and it's too hot out to want to cook. It's always good to have options, isn't it?
- Saturday, May 24th from 11 - 3, I'll be demoing the God and Goddess Butters at Hunger Mountain Coop. So if you've been curious to try some really RAWsome chocolate treats, you have to stop by for some samples! The word on the street is that the butters are equally loved - you'll have to make up your own mind: will you like the God Butter over the Goddess Butter? If you are even curious with the names: the Goddess Butter is a dark chocolate in a really raw (NOT PASTEURIZED) almond butter base and the God Butter is white chocolate butter in a really raw cashew butter base. The tastes are truly divine, heavenly and ethereal. :-D
- I'm doing a class on June 20th - it's a 3-hour class called A DAY IN THE LIFE OF RAW where we'll do a boatload of recipes and I want you to come with an empty stomach as you'll be sampling the whole time you're learning. The cost of the class is $45.00 and it will be held in our future Fiddle Heads cafe.

- the cafe/store will open soon I promise! We're doing all that we can - working 14+ hour days to get things together. Please be patient a little while longer. Also, please know that I continually take phone, email and internet orders. Whatever you need, we're helping people. I just placed an order for 4 and 5 tray dehydrators and I have a couple 9 trays here for those of you who want to make your own fruit leathers, crackers, breads, yogurts, etc...

It just feels & tastes good & I'm not feeling like I have to digest a lead balloon before having any energy. now for the raw recipe this week
Raw Tortillas - Makes about 6 tortillas
This is a fun thing to know how to make. You want to remove these before they get too dehydrated - they won't taste bad - they'll be crackers instead of pliable tortilas.
Ingredients
- 1 cup golden flax seeds, soaked for 1-2 hours in 1 cup filtered water
- 1/2 ripe avocado
- 1 ear of corn, shaved
- 1 teaspoon cumin
- pinch cayenne peppe
- Celtic sea salt to taste
- extra filtered water
Preparation
Soak the flax seeds - they will become plump and gelatenous from the water. Then put all the ingredients into a blender or food processor and process until smooth. Spread batter thinly onto Teflex sheets in circular shapes if you'd like, about 6 inches in diameter. Dehydrate 105º for 2-3 hours and flip. Dehydrate for another 2-3 hours. Check often after you've flipped and remove while the tortillas are still pliable.
Serving suggestions: Serve as you would any tortilla and stuff with lettuce, fresh salsa and try this refried bean recipe below.
RAWfried Bean RAWcipe
This makes a LOT so make it up, divide it in half and freeze half. Or better yet, have a raw food potluck and invite me over!
Ingredients
- 4 cups soaked sunflower seeds (2 ? cups before soaking)
- 1/4 cup flax oil, hemp oil, or olive oil
- 3 tsp. onion powder
- 2 tsp. mild chili powder
- 2 tsp. cumin powder
- 1 tsp. Celtic Sea Salt
- 1 Tbs. unpasteurized dark miso paste
- 3 Tbs. raw tahini
- 1 Tbs. apple cider vinegar
- 3/4 cup filtered water
Preparation
Put all ingredients in a food processor and process until creamy. It's always a good idea to start with less of the spices so you can adjust them to your own taste buds.
