Howdy folks!

Hoping you are well and happy. If not, please consider adding more living foods to your day! :-)
We are having another sort of storm today - a "Wintry Mix" of sleet, rain and snow. Yesterday most of the driveways were melted and now we're slushy again. But we are getting some sunshine on some days so soon we'll have dirt and mud and budding plants.

I'm getting some info out late but we're having a class the last weekend of March. 'Tis a good time to think about a cleanse and what better way than to give you some good tools for your toolbelt? (Plus good food as well.) I'm attaching the flyer for your information - it's a low res jpg. Please feel free to pass it along to whomever you might feel is interested. If cost is prohibitive but you'd still like to take the class(es) please still call or email me and we'll work something out. When I say that I want to offer a "no excuses" way to eat more healthy each day, I mean it

upcoming raw food haps

I'm introducing a "Chick-UN Salad" this week to replace the Eggless Egg Salad.

For those of you who love it, you can still get it directly from me. I'm just needing to make a change in the grab and go cases. The NOT Tuna will still be there as well as the fudges, cookies, & crackers. All the stores are also carrying the god and goddess butters either in the grab and go section or in other places in the store.

I'm doing 7 day challenges still! Been getting lots of calls on that and the answer is yes, I'm still doing the challenges! Please email me off list for more info. Spring cleaning is in the air, isn't it? Time for a raw food cleanse!

I recently was given some eggplant so I decided "what the hell, I'll make that raw bacon again." The first time I made it, I wasn't too impressed. I did my usual search and found one that looked pretty good from the goneraw website. I changed it though - I always change up the recipes because I just have to. You'll do that too once you start getting more comfortable in living foods. �Anyway, here goes:

RAW FOOD ALTERNATIVE TO BACON:

Makes around 30 to 40 strips - depending on how large your egglplant is

Ingredients
  • 1 large eggplant, peeled
  • 1/2 cup olive oil
  • 3-4 teaspoons Umeboshi paste
  • 1 teaspoon paprika
  • 1/8 teaspoon cayenne
  • 2 tablespoons agave nectar
Preparation

Peel the eggplant and cut into quarters length-wise. Thinly slice your eggplant, lengthwise and put on a cookie sheet, laying out flat. Take some salt and sprinkle on the eggplant to sweat the eggplant - this helps to soften it up a bit. It's not necessary but it's something I always do. Let the eggplant sweat for an hour or two and then rinse off the salt if you wish. Transfer eggplant to a big bowl.


Put the remaining ingredients in the VitaMix and blend together. If you don't have umeboshi paste, you can experiment with a drop of liquid smoke and add a touch of apple cider �or rice vinegar (not raw). Blend for just a few seconds and pour of the eggplant and stir to make sure it all gets marinated. Let it sit for another hour or so.

Place on dehydrator sheets. Dehydrate for about 8 hours at 105 degrees and then turn over to dehydrate more if need be. The longer it dehydrates the crunchier it gets. You still might have to dab it down with paper towels just like you do with regular bacon.�

We ate a raw BLT last night and I also tore it into pieces and put on my salad. It's amazing how much it looks like regular bacon. � The raw BLT was just putting some raw mayo on a piece of red leaf lettuce, adding some tomato and some raw bacon. We folded it up and ate it. It's pretty good!

Recipe for RAW MAYO

This makes a lot so you'll have it for other things. Put it in a jar and keep it in your fridge. Replace it for the regular mayo that you normally use:

Ingredients

  • 1 avocado, peeled and deseeded
  • 1 cup soaked cashews
  • 1 tablespoon additional lemon juice
  • 2 tablespoons apple cider vinegar
  • 2-3 teaspoons agave
  • 1 teaspoon italian seasoning if you have it, not necessary
  • 1 clove garlic
  • a good pinch of celtic sea salt
Blend everything in the VitaMix - you made need the plunging thing to push the ingredients down as this is very thick. VOILA! You have creamy mayo! �You can also put everything in the food processor and blend it up that way. Easier but less creamy. It's a very nice recipe. Only add a little to your sandwiches as a little goes a long way.
